"Designed by Eades & Bergman, the venue interior not only pays heritage to the New York dining scene, but also makes its mark amongst Melbourne’s top bars and eateries. Nieuw Amsterdam owner Michael Roszbach (ex-Cookie) had an inkling of what he wanted for his new venture, but until he found the double storey 1880s red brick building he wasn’t certain.Bringing interior designers Eades & Bergman on board (the creative duo behind The Meatball & Wine Bar, Mr Miyagi and Bomba Bar), it became apparent that the exposed brick, beautiful archways and big windows screamed New York style, and Nieuw Amsterdam was born.New York influences aside, the upstairs dining area has a distinct French bistro feel, with dark wood and classic bistro furnishings. Chef Jeffery Trotter makes use of fresh and seasonal produce to create a menu that pays homage to American cuisine and those that shaped it.Come evening head down to the dimly lit basement cocktail bar, perfect for night owls and, as Roszbach so eloquently puts it, “hang-ups, hangovers and heartaches.”
The Bohemian, is a Spanish influenced brasserie; to cross through the threshold is to step into an experience rich with nostalgic quality, which calmly stimulate the senses and represent both the fine food and the visionaries housed within this special venue. It diligently remains true to Bohemia with full circle considerations and its unconventional wall-papered veneer help create an aesthetic of modernity. The décor is reminiscent of Cuban restaurants or Spanish eateries with rich earthy tones for colours; dark wood and soft leather featuring heavily for materials. Head Chef Josep Espuga hails from Spain, having spent his formative years cooking throughout Europe and in his family restaurant, mastering the highest levels of culinary arts. Arriving with a smorgasbord of international experience, before making his more recent journey over to Melbourne, he held the top job at Degustation in New York.
